A healthy way to grill veggies! Makes a great sandwich too!

Ingredients

  • 1/2 cup thickly sliced zucchini
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced yellow bell pepper
  • 1/2 cup sliced yellow squash
  • 1/2 cup sliced red onion
  • 16 large fresh button mushrooms
  • 16 cherry tomatoes
  • 1/2 cup olive oil
  • 1/2 cup soy sauce
  • 1/2 cup lemon juice
  • 1/2 clove garlic, crushed

Directions

  1. Place the zucchini, red bell pepper, yellow bell pepper, squash, red onion, mushrooms, and tomatoes in a large bowl.
  2. In a small bowl, mix together olive oil, soy sauce, lemon juice, and garlic. Pour over the vegetables. Cover bowl, and marinate in the refrigerator for 30 minutes.
  3. Preheat grill for medium heat.
  4. Lightly oil grate. Remove vegetables from marinade, and place on preheated grill. Cook for 12 to 15 minutes, or until tender.
Very good recipe. You can add some fresh basil and oregano for more taste if you like. Don’t forget to serve this on white tableware for a nice look.

Chutney Chicken Salad

A quick and easy fruit and curry chicken salad.

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup chutney
  • 1 teaspoon curry powder
  • 2 teaspoons lime zest
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon salt
  • 4 cups diced, cooked chicken breast meat

Directions

  1. In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt. Add chicken and toss with the dressing until well coated. Add more mayonnaise to taste, if desired. Cover and refrigerate until serving.

Ingredients

  • 1 (12 fluid ounce) can frozen pink lemonade concentrate
  • 12 fluid ounces gin
  • 1/2 cup vanilla ice cream
  • 1/2 cup frozen strawberries
  • 1 cup crushed ice

Directions

  1. In a blender, combine pink lemonade, gin, ice cream, strawberries and ice. Blend until smooth. Pour into glasses and serve.

Sweet Chili Thai Sauce

A savory sauce to use as a dip with shrimp or spring rolls, in stir-fries and noodle dishes, chicken and vegetable.

Ingredients

  • 1 cup water
  • 1 cup rice vinegar
  • 1 cup sugar
  • 2 teaspoons fresh ginger root, minced
  • 1 teaspoon garlic, minced
  • 2 teaspoons hot chile pepper, minced
  • 2 teaspoons ketchup
  • 2 teaspoons cornstarch

Directions

  1. Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, and ketchup; simmer for 5 minutes. Stir in cornstarch. Remove saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.

Holiday Cranberry Salad Recipe

This tangy fruit salad is perfect with turkey or ham, and has very delicious taste.

Ingredients

  • 1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
  • 1 (20 ounce) can crushed pineapple, with juice
  • 2 cups white sugar
  • 1/2 pint heavy whipping cream
  • 1 cup chopped walnuts
  • 2 cups miniature marshmallows

Directions

  1. In a large bowl, stir together the cranberries, pineapple (with juice) and sugar. Let stand for about an hour, to let sugar dissolve, and then pour the mixture into a strainer over a bowl. Let drain, covered, in the refrigerator for at least two hours, or overnight. (Note: The drippings make a wonderful cranberry punch, when mixed with lemon-lime soda!)
  2. Before serving, whip the cream until soft peaks form. (You can sweeten the whipped cream with a little sugar, if desired.) In a large bowl, mix together the cranberry mixture, walnuts and marshmallows. Fold in the whipped cream and store in refrigerator until serving.

Ingredients

  • 2 teaspoons dashi granules
  • 4 cups water
  • 3 tablespoons miso paste
  • 1 (8 ounce) package silken tofu, diced
  • 2 green onions, sliced diagonally into 1/2 inch pieces

Directions

  1. In a medium saucepan over medium-high heat, combine dashi granules and water; bring to a boil. Reduce heat to medium, and whisk in the miso paste. Stir in tofu. Separate the layers of the green onions, and add them to the soup. Simmer gently for 2 to 3 minutes before serving.

Ingredients

  • 2 pounds ground beef
  • 4 (14.5 ounce) cans kidney beans
  • 4 (15 ounce) cans diced tomatoes
  • 1 (12 fluid ounce) bottle beer
  • 1 (12 ounce) bottle tomato-based chili sauce
  • 1 large white onion, chopped
  • 6 cloves garlic, minced
  • 2 tablespoons chili seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1/4 cup sugar
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce

Directions

  1. Place the ground beef in a large pot and cook over medium heat until evenly brown. Drain off the excess fat.
  2. Mix in the kidney beans, diced tomatoes, beer, chili sauce, onion, garlic, chili seasoning, black pepper, garlic powder, onion, cayenne pepper, oregano, sugar, hot sauce, and Worcestershire sauce. Bring to a boil. Reduce heat to low, and simmer for about 4 hours, stirring occasionally.

Iced Tea Treat

Ingredients

  • 6 black tea bags
  • 1/2 cup white sugar
  • 1 gallon boiling water
  • 1 (6 ounce) can frozen lemonade concentrate

Directions

  1. Place the tea bags and sugar into a 1 gallon glass jar. Fill with boiling water. Let steep for 2 hours at room temperature. Remove and discard tea bags. Stir in lemonade concentrate. Refrigerate until cool.
Quick, easy, very tasty and much less expensive than iced tea mixes, served on plastic glasses with ice.

Apple Raisin French Toast Strata

A simple but elegant way to make breakfast fast. Sweet and delicious.

Ingredients

  • 1 (1 pound) loaf cinnamon raisin bread, cubed
  • 1 (8 ounce) package cream cheese, diced
  • 1 cup diced peeled apples
  • 8 eggs
  • 2 1/2 cups half-and-half cream
  • 6 tablespoons butter, melted
  • 1/4 cup maple syrup

Directions

  1. Coat a 9×13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
  2. In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
  3. Preheat oven to 325 degrees F (165 degrees C).
  4. Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.
Serve with lots of extra maple syrup! You may also add extra raisins if you wish. This Apple Raisin French Toast Strata will look nice and tasteful on clear plastic plates.

Tastety Curry Cheddar Scrambled Eggs

Ingredients

  • 1/4 teaspoon curry powder
  • Salt and pepper, to taste
  • 2 large eggs, beaten
  • 2 tablespoons shredded Cheddar cheese
  • 1/2 teaspoon margarine or butter

Directions

  1. Sprinkle the curry powder, salt and pepper onto the beaten eggs; beat together until well blended. Stir in the Cheddar cheese.
  2. Melt the margarine in a skillet over medium heat. Pour in the eggs, and cook, stirring constantly until firmed to desired temperature, 3 to 5 minutes.
Very nice and simple, too. A good idea of different eggs preparation, will be more tasteful when serve on biodegradable plates.
